Sauce and soup thickener

To thicken sauces or soups, blend two tablespoons of butter with two tablespoons of flour and shape into small balls. Drop them, one at a time, into the hot liquid, stirring as the sauce thickens. Do not let the liquid boil – merely simmer long enough to get rid of the raw flour taste. The two-tablespoon mixture is enough to thicken one cup of liquid.
