7-12” in diameter, firm or hard to touch, and flowerets are white or light cream. Gently grip sides of head with fingers. Use a kitchen pairing knife, cut stem leaving no more than 2” inches attached to head. You will likely get 1-2 additional cuttings from same plant before it dies. It’s best to harvest cauliflower as needed.
