Firm. Cut stalk at base of head with sharp knife. Discard outer leaves. Best to harvest in morning when heads are cool. After removing center head, small heads may develop where base leaves meet stem. Let one grow. You'll often get another head around 1-2 pounds. Keep heads in cold, moist area, just about freezing and around 90% humidity.
