Pencil and snap when broken. Seeds inside should be small and underdeveloped. Beans are over mature if seeds have begun to fill out pods. Hold stem with one hand and pod with the other to avoid pulling off branches that will produce later pickings. Carefully pinch pods with fingers or scissors. Pick all pods to keep plants productive.
