Tan or brown. When seeds are ripe, the flower head often becomes somewhat fluffy and loose. On a dry day, pop off a sample flower. Crush it in your hand. Look for hard, dry seeds or nutlets, which are heavier than the bits of dried flower. You will usually find seeds in the middle of the dried-up flower heads.
