Use leftover white rice to make a wonderful homemade fried rice

Saute leftover rice in a little vegetable oil until hot and golden. Stir in chopped green onions, a handful of frozen peas, chopped ham, chicken, or cooked shrimp (whatever you have on hand). Make a hollow in the center, break in two or three eggs, and scramble them into the rice. Add a little soy sauce and toss to mix.
