Don’t set a baked cake on the counter top to cool. Moisture leaches from the top. Put directly into the freezer for at least 2 hours. Set on a hot pad to protect freezer surface. Leave the (covered) cake frozen for months, or defrost easily in minutes after cooling 2 hours. You will never have a more moist cake.
