Substitute for baby spinach although it’s best in cooked preparations. Often paired with fresh cheeses, chile sauces. Pair with fresh citrus and berries, nuts, strong cheeses, peas and asparagus, eggs and potatoes. Toss with hot pasta or grains until barely wilted.
