Slice skin off. Slice thick pieces from core or cut horizontally into discs, core. Can bake into sponge cakes, coffee cakes, roasted with soy or brown sugar, skewered, grilled. Puree, strain juice, add to cocktails or agua fresca. Cook slices in water and sugar to candy, then top custards, flan or cheesecake. Dice fresh with tomato herbs, chiles for salsa.
