Mole sauces. Ideal as addition to hors d'oeuvre trays, chilled crispy slivers are delicious in salads, relishes, vegetable dishes, stews, dips, uncooked sauces. Relatively thin skin does not require peeling. Once testing potency for palatable sweetness, stuff same as celery for unusual appetizer. Fill with favorite cheese, meat mixture. Gently sauté. Add colorful piquancy to grain, bean dishes.
