Wear gloves. Cut off stalks, slit body of chile open, discard seeds. Dried form of the chile “pasilla” is excellent for sauces or can be ground into a table sauce. To store chiles, refrigerate between paper towels or in plastic bag up to one week. Wash hands thoroughly with soapy water.
