A sharpening steel is a common tool for knife sharpening. They are usually included in a cutlery set, or you can purchase them separately. To properly use a sharpening steel, hold the sharpening steel in one hand and your dull knife the other hand. Place the blade of the knife under the sharpening steel. The blade and the sharpening steel should be touching on the base near the handles. With the blade at a 20-40 degree angle, run the blade across the bottom-side of the sharpening steel (8-10 strokes). Make sure that the entire length of the blade runs across the steel. Turn the knife over and repeat the same process for the other side of the blade.
Another sharpening tool you can use for your kitchen knives is a sharpening stone. They usually come with coarse grit on one side and fine grit on the other. When using a sharpening stone, lay down a damp towel or rubber mat underneath to create traction. Put the stone down with the coarse side facing up and spread a few drops of mineral spirits on the surface for lubrication. Hold the knife in one hand and place the blade at a 20-40 degree angle against the surface. Steady the side of the blade with your other hand (with light pressure). Run the blade across the surface from the tip down to the handle for 8-10 strokes. This motion should be pushing the blade away from you. Turn the blade over and repeat the same process for the other side of the blade.
Electric Sharpeners are an easy option for knife sharpening. They usually require you to place the blade into the machine and pull the knife towards you. Consult the manual for specific instructions on how to use the particular machine.
